The prized blue crab (Callinectes sapidus) is a highly delectable crustacean enjoyed by people across the country and was a staple in the diets of Native Americans and early European settlers in the 1600’s. The crabs are native to the Gulf of Mexico and the waters of the western Atlantic and are very important to the culinary industry and the overall economy of the United States. Commercial crabbing began in the Gulf of Mexico in the 1880’s and continues today along Gulf coastal waters. The name blue crab comes from the ancient Greek language and means “beautiful swimmer.”
